I like to make these breakfast sandwiches on the weekend. I make enough so that we have breakfast for a few weekdays also. They just need a few minutes in the toaster oven to reheat and they are ready to go!
Just crack the eggs into a muffin pan. I usually cook them in the oven at 350 degrees. I can never remember the actual time that I cook them for but I would guess around 10 minutes. It all depends on how squishy you want the eggs. I don’t like any squish. (My daughter would hate my technical terms for cooking but you get the idea.) While the eggs are cooking you can prepare the sausage or anything else that you might want to add. I just half the english muffins, sprinkle shredded cheese on them and toast them in the oven until the cheese has melted.
Just assemble them and you are done!! It’s so easy and they are tasty! It’s nice to have breakfast ready for the busy weekdays.
