Roasted Asparagus

I make this for just about every holiday.  The most recent time was Easter.  We also just make a Costco sized bag of it for dinner sometimes, and eat the whole tray!!

First off – does everyone know you have to cut or break off the ends of the asparagus?  Well you do, the ends are tough and “woody”.

I have always been told that asparagus “knows” where to break.

You just easily take both ends and slowly bend

Keep bending until it breaks

Clean break – and no “woodiness”

Lay the asparagus on the tray – because I am annoying, I make sure they are all going the same direction.

I just sprinkle with Salt and Pepper and then olive oil.

Place in 400 degree oven.  Check every few minutes, but it typically takes about 25 minutes.  I sort of stir them around every so often though – I probably like them browner than most people…but they get so crispy and yummy when they are brown!

    I LOVE asparagus !! I try to eat it at lest one a week. I out olive oil, sea salt, and some lime pepper on it. Give it a whirl!

    You have great taste in veggies!

      Well – I hate tomatoes and peppers….but I will pretty much eat any other veggie.

    I’ve been gathering a few each day & washing & eating raw or putting in a smoothie, but those look delicious. Will have to try.
