I made these recently and we loved them so I decided to share. I don’t know who to credit with where I first heard about this but lots of people do it and have done it for several years. Honestly, I don’t know if these are cupcakes or muffins. Both are good though, so who cares what we choose to call them – right?
Take a cake mix, any flavor and a can of pumpkin. And voila!
Since it is fall, I chose Spice Cake Mix.
It is very important that you don’t follow the directions on the box. We all know that I don’t follow directions anyway…but we have permission to not follow them today! The only info that I get from the cake mix box is what temperature to heat the oven, and how long they think cupcakes should bake.
I mixed the two ingredients and then used an ice cream scoop to plop them into a greased muffin tin.
I baked them according to the package and here they are! (raw and baked look quite similar!)
We decided we wanted to have the option to put frosting on them, so I bought 2 kinds.
I am pretty sure we liked the Duncan Hines one best, but I really can’t remember now!
They were yummy, fun, fast, and easy. All wins in my book. They freeze really well too. I popped at least half of them in a ziplock and tossed them in the freezer. Then if Russell or I want a sweet treat we grab one or 10 (LOL) and zap them in a the microwave.
