So this isn’t really a recipe, but I wanted to share something we have been eating a lot lately. I make a big batch of Taco Meat during the weekend and we eat it for lunch or dinner during the week, and it has been so easy and convenient. I have been eating low carb/Keto and this is convenient as I can eat it with little adjustments, and Russell can eat it as well. I have tortillas on hand, avocado, lettuce, hot sauce, sour cream and cheese and corn chips.
So I was doing this a lot a few weeks ago with just ground beef. Then I tried it with just chicken, and got to thinking – why not do a mix? We love it. I have been buying ground beef, ground chicken and ground pork. I mix it all together, which takes some working it in my big skillet.
I then drain it and put it back in the skillet and follow the recipe on my HUGE taco seasoning bottle. I do make my own taco seasoning, but sometimes McCormick makes it much easier!
So this time, I had about 5 pounds of meat, which took 1 cup of seasoning and over 3 cups of water.
I like to let it cook and thicken a bit.
I then divide it between 2 containers and freeze one and put the other in the fridge. We literally will get a good 8 portions out of each container.
As you have seen from my posts, I like to do big batches of things and then stock my freezer with some of it for a rainy/lazy day!
Great, now I want a taco!
